Warm. Comforting. Familiar.
I just finished cooking and eating Zuppa del Nord! The soup was overall very good. It definitely reminded me and my husband of a french onion soup. The difference being the Zuppa del Nord centers on cabbage. Prepping and cooking the soup was very simple. The recipe calls for 4 yellow medium onions; I ended up washing the onions before slicing to try to avoid the watery eyes. Washing definitely took some of the sting out of slicing onions but I’d be lying if I said I didn’t shed a couple tears. The recipe also requires 8 cups of vegetable stock- I ended up using store bought but in the future I will try to make my own! I only have one tweak for this recipe: salt! This soup needs more of it. I will definitely be salting to taste in the future with this recipe. I can’t wait to hear how Erin likes the soup and any tweaks she makes! -Megan
